Barbecue Chicken Bolognese with Casarecce


4 T. vegetable oil

1 green bell pepper, seeded

1 sweet onion, peeled

1/2 Poblano chili, seeded, minced

1 jalapeño pepper, seeded, minced

2 T. fresh garlic, minced

1 lb. sausage, diced

1 lb. ground chicken

32 oz. jar of pasta sauce

½ c. smokey BBQ sauce

2c. chicken stock

1 lb. penne pasta

1/2 lb. cheddar cheese

1/3 c. Mascarpone cheese *optional

Parmesan cheese optional

1 c. of cilantro for garnish


Heat grill to high heat. Coat bell pepper, onions, poblano chili, jalapeno peppers and sausages with 2 tablespoons of oil. Place on grill and grill sausages for 8-10 minutes or until cooked through and char bell pepper, onions, poblano chili, jalapeno peppers until softened. Remove from heat and set aside to cool. Dice bell pepper, onion, chili, and jalapeno and minced garlic; set aside. Add remaining oil to a cast iron skillet over medium-high heat. Place ground chicken in skillet and stir frequently, until the meat is browned. Add sausage, peppers, onions, chilies, pasta sauce, barbecue sauce and chicken stock to skillet. Stir ingredients, cover and reduce heat to a simmer. Cook sauce for 20-25 minutes. Remove sauce from heat. Add penne pasta, cheddar and Mascarpone cheese to sauce. Toss gently to combine. Transfer pasta to a platter and garnish with parmesan cheese and cilantro.
